But in the past few years I decided to try it again but couldn't seem to find a really good recipe... UNTIL LAST WEEK!
My mother-in-law (who is the best cook in the ENTIRE WORLD) made a meatloaf from
a recipe in the Baxter Bulletin and it... was... delicious!
I made it a couple nights ago and meant to take a photo of it but we ate it up too quickly...
I just forgot all about my camera!
So I found a generic photo on the web... it doesn't really do it justice...
Here is the recipe folks! It's beyond YUMMY!!!
Upside-Down Meat Loaf
1/2 c. brown sugar
1/2 c. ketchup
1 1/2 to 2 pounds LEAN ground beef
3/4 c. milk
2 eggs, beaten
1 1/2 t. salt
1/4 t. pepper
1 small onion, grated
1/4 t. ginger
3/4 c. crushed saltine crackers
Butter a 9x5 loaf pan. Press brown sugar in bottom and spread ketchup over the sugar.
Mix remaining ingredients together and shape into loaf. Put on top of ketchup. Bake at 350 for 1 hour.
Turn upside down and serve.
i will have to try this one. it's just about like mine.
